DISTILLER'S DRAM

For 70 years MORTLACH was the best kept secret in the world of whisky. During this time it was almost exclusively used as the cornerstone of the 20th century's most ICONIC BLENDED Scotch Whiskies. Even our distillers, coopers and labourers could only enjoy their creation layered amongst other whiskies of Scotland.

Finally, in 1992 we decided it was time to unleash "THE BEAST OF DUFFTOWN" and release an elegant 16 YEAR OLD so a fortunate few, including our distillery workers, could experience the uniquely complex character of MORTLACH.

This SINGLE MALT Scotch Whisky is inspired by the iconic and rewarding first bottling of the 16 YEAR OLD RELEASE. It has been matured in only Sherry casks to impart SPICY and SWEET notes stop the beastly complexity synonymous with MORTLACH.

2.81 DISTILLED

Utilising a fiendishly COMPLEX DISTILLATION process unlike any other. Three wash stills and three spirit stills - each unique in shape and size - distill, cut and distill again, precisely 2.81 times to create the distinctive rich and bald character of MORTLACH.

How We Feel About the Spirit

Mortlach 16 Year Single Malt Scotch Whisky — His, Hers & the Good Life

Joint Introduction

Our May 2025 PourMore Enthusiast Whiskey of the Month Club delivery arrived with a bottle we didn’t expect, from a distillery we had somehow never crossed paths with: Mortlach. The name alone felt like a growl from the Highlands — bold, storied, and just a little mysterious.

The description on the box read like a secret finally being whispered aloud: a whisky once reserved for the fortunate few, matured entirely in sherry casks, shaped by a fiendishly complex 2.81-times distillation process, and known unapologetically as “The Beast of Dufftown.”

We haven’t opened it yet.

And somehow, that makes it even better.

There’s a particular kind of magic in having a bottle that feels like it’s waiting for the right moment — a bottle that knows it’s special and is content to sit quietly until you’re ready to meet it. Mortlach 16 has that presence. Heavy. Confident. A little wild around the edges.

So before the cork even moves, here’s what we think of this intriguing creature from Dufftown.

His Take (Jeff)

There’s something about this bottle that feels like it has weight beyond the glass. Maybe it’s the history — seventy years of being the backbone of iconic blends before Mortlach finally stepped into the spotlight. Maybe it’s the promise of sherry casks and that “beastly complexity” the distillery seems almost proud of.

To me, this looks like a whisky that doesn’t care about trends or tasting‑room theatrics. It’s built for people who appreciate depth — the kind of pour that doesn’t rush to impress you but rewards you for paying attention.

The notes from the maker read like a challenge: stewed black orchard fruits, earthiness, spice, leather, honey, a palate‑coating richness, and a finish that sweetens when you least expect it. That’s not a polite whisky. That’s a whisky with a backbone.

I’m expecting something bold, maybe even a little unruly — the kind of bottle that reminds you why Scotch is an art form. And honestly, I’m ready for it.

Her Take (Nancy Fae)

This bottle feels like a story waiting to be told — and you know I’m a sucker for a good story.

The label alone reads like a chapter from a whisky folklore book: Distiller’s Dram. The Beast of Dufftown. Inspired by the illustrious original made for a fortunate few. It’s dramatic in the best way, like it knows it has a legacy to uphold.

What draws me in most is the sherry‑cask promise. Rich, fruity, fragrant… layered over something darker and more primal. I imagine a whisky that starts with elegance and ends with a growl — a beauty‑and‑the‑beast moment in a glass.

And the distillation process? 2.81 times. Who does that? Only someone obsessed with getting it exactly right. That kind of intentionality always wins me over.

We haven’t opened it yet, but I already know this bottle will become a moment — one we’ll remember, one we’ll probably write about, and one that will earn its place in our Sipping Room story.

Joint Closing — His, Hers & the Good Life

His: This bottle feels like a reminder that craftsmanship still matters — that some things are worth doing the hard way.

Hers: And that some spirits carry a history you can feel before you ever taste them.

The Good Life: It’s the anticipation, the ritual, the shared curiosity — the way a single unopened bottle can become a small celebration of patience, discovery, and the joy of savoring life one pour at a time.

How We Will Enjoy This Whisky

When the moment finally arrives — and it will — we’ll approach Mortlach 16 with intention.

We’ll pour it neat first, letting the aroma rise slowly from the glass. The maker suggests a drop or two of water to coax out the sweetness and meatiness, and we’ll honor that. This is a whisky that deserves to be opened gently, not rushed.

We’ll sit with it.

Let it breathe.

Let us breathe.

We’ll look for the stewed fruits, the spice, the leather, the honey — all the layers Mortlach promises. We’ll wait for that surprising sweetening at the finish. And we’ll talk about it the way we always do: comparing notes, laughing at how differently we taste the same thing, and savoring the moment as much as the whisky.

This bottle won’t just be opened.

It will be experienced.

And that’s exactly how the Beast of Dufftown should be welcomed into the Good Life.
