How We Feel About the Cocktail

Pacific Harvest Old Fashioned: A Toast to Oak, Orchard, and Ocean Air

Some cocktails feel like they’re built for a season, a mood, or a moment. The Pacific Harvest Old Fashioned felt like all three. Built on the bold, expressive character of Westward Top Flight Series Barrel 16 American Single Malt Whiskey, this drink carried the unmistakable Westward signature—grain-forward, oak-rich, and deeply tied to the Pacific Northwest.

But when we made it, we added our own small twist. Instead of the toasted walnut garnish, we rimmed the glass with Sweet Cinnamon Sugar, letting that warm, fragrant sweetness frame every sip. It turned out to be a beautiful choice—unexpected, but perfectly in step with the whiskey’s personality.

The photo we captured that night says it all: amber glow, textured glass, and a rim that sparkled just enough to hint at the cozy sweetness waiting inside.

🍊 On the Nose

The first inhale was layered and inviting, a blend of rugged whiskey character and soft, aromatic sweetness.

  • Toasted grain and seasoned oak rose immediately from the Westward, grounding the cocktail in its single malt roots.

  • The expressed orange peel added a bright, zesty lift, cutting through the richness with a flash of citrus.

  • The cinnamon sugar rim surprised us — warm, bakery-sweet, and gently spiced, it drifted upward with every tilt of the glass.

  • Beneath it all, the maple syrup contributed a dark, woodsy sweetness that tied the aromas together.

It smelled like a Pacific Northwest autumn evening: crisp air, warm spice, and the comfort of something handcrafted.

🥃 On the Palate

The sip unfolded in layers, each one shaped by the interplay between the whiskey’s intensity and the cocktail’s subtle sweetness.

  • The Westward single malt led the way—malty, bold, and full of character, with Barrel 16’s proof carrying flavors across the palate with confidence.

  • The maple syrup softened the edges, adding a velvety texture and a hint of caramelized depth without ever becoming sugary.

  • Black walnut bitters brought a roasted, savory undertone that grounded the cocktail.

  • The orange bitters added just enough brightness to keep everything lifted.

  • And that cinnamon sugar rim? It added a gentle sweetness right at the front of each sip, almost like a warm welcome before the whiskey took over.

The result was a cocktail that felt both rugged and refined—grain, spice, citrus, and sweetness in perfect conversation.

🔥 On the Finish

The finish lingered long and warm, shaped by both the whiskey and the rim.

  • Oak and baking spice carried through from the Westward, deep and satisfying.

  • A faint earthiness from the walnut bitters added structure.

  • The cinnamon sugar left a soft, sweet echo on the lips, making each return sip feel even more inviting.

  • A final whisper of orange oil resurfaced at the end, tying the experience back to that first aromatic moment.

It was the kind of finish that encourages slow sipping and easy conversation.

🌊 The Experience

What we loved most about the Pacific Harvest Old Fashioned was how personal it became with just one small change. The Sweet Cinnamon Sugar rim didn’t just replace the toasted walnut—it transformed the cocktail’s mood. It added warmth, softness, and a touch of indulgence without overshadowing the whiskey’s craftsmanship.

The drink felt like a celebration of contrasts: coastal grain and orchard sweetness, rugged oak and gentle spice, tradition and a little playful improvisation.

It reminded us why we love these moments—why we mix, taste, adjust, and savor. Because sometimes the best part of a cocktail isn’t just the recipe. It’s the experience of making it your own.
