Where Bourbon Meets the Menu: The Ledges Tasting Experience


There’s a particular kind of magic to arriving early at The Ledges — the kind that makes you feel like the night is already unfolding in your favor. The air was crisp, the view was showing off, and the atmosphere carried that quiet confidence of a place that knows how to host a beautiful evening. And since this was one of their monthly bourbon tasting events, we knew we were in for something special.


Before the first pour, we made our way to the bar. Joey — our forever‑favorite bartender — was already there, smiling like he knew he was about to set the tone. Ashley ordered her go‑to Amaretto Sour, and I decided to branch out with something from the seasonal menu: the Ledges Sling. Casamigos Reposado tequila, Amaro Montenegro, pineapple juice, lemon juice … bright, smooth, and just adventurous enough to make me feel like I was starting the night with intention.



With drinks in hand, we headed to the ballroom, where the tables were dressed, the lighting was soft, and the bourbon lineup was staged with the kind of intention that makes you slow down and appreciate the moment.


I couldn’t help myself — the bottles with the tasting glasses behind them were too beautiful not to photograph. There’s something about a well‑set bourbon tasting that feels ceremonial, like you’re about to witness a performance rather than just sip through a flight.

Chef Phil and his team had prepared a four‑course menu to pair with the four featured bottles, and from the very first plate, it was clear the kitchen came ready to impress.

1. Angel’s Envy Small Batch Limited Release Kentucky Straight Rye Whiskey Finished in French Oak Barrels (92 Proof)


Paired with: Miso‑Glazed Japanese Eggplant


The rye opened soft and aromatic, and the miso glaze brought out a savory‑sweet balance that made the first sip feel like a warm handshake. A gentle, elegant start.



2. Stonestreet Founder’s Edition Small Batch Kentucky Straight Bourbon Whiskey (94 Proof)


Paired with: Nobu‑Style Spicy Tuna on Crispy Rice


The spicy tuna itself was delicious — fresh, flavorful, and beautifully seasoned — but the crispy rice leaned a little too crispy, making the bite harder than expected. It sparked a fun round of conversation at the table, though, as we compared textures and talked about how the bourbon’s caramel notes still managed to shine through. Sometimes the almost‑there pairings are just as memorable as the perfect ones.



3. Noah’s Mill Bourbon Whiskey by Willett (114.3 Proof)


Paired with: Wagyu Carpaccio with Granny Smith Apples, Rainbow Carrots & Radish


This was the moment the table collectively leaned in. Noah’s Mill came in hot — literally — but once you eased past the proof, the complexity unfolded beautifully. The Wagyu carpaccio was delicate and bright, and the bourbon wrapped around it like velvet.


This pour ended up being our family favorite — Ashley, Jeff, and I all agreed.



4. Willett 4‑Year Cask Strength Rare Release Kentucky Bourbon Whiskey (127.4 Proof)


Paired with: Paris Brest with Butter Pecan, Dark Cherry & Toasted Almond


And then came the showstopper.


The Paris Brest was hands‑down our favorite dish of the night — airy, rich, and layered with butter pecan and dark cherry in a way that felt both nostalgic and elevated. Paired with the bold, high‑proof Willett, it created this gorgeous contrast of heat and sweetness that lingered long after the last bite.


If the evening had an exclamation point, this was it.

A Toast to the Team


Throughout the evening, we found ourselves chatting with our neighbors at the table — swapping tasting notes, comparing favorites, and laughing over how each pairing brought out something different for each of us. It’s the kind of easy conversation that makes these nights feel special.


All four whiskeys were lovely on the nose, but Noah’s Mill and the Willett 4‑Year showed off the most depth once you got past their heat. Still, the dessert pairing stole our hearts — a perfect finale to a beautifully curated night.


Hats off to Terry Wilbanks, Chef Phil, and the entire Ledges team for another thoughtful installment of their monthly bourbon tasting series. From the cocktails to the courses to the company, it was one of those evenings that reminds you why this place continues to set the standard for elevated experiences in Huntsville.


A gorgeous ballroom, a thoughtful menu, and a lineup of bourbons worth savoring — that’s our kind of night. And as always, we raise a glass to His, Hers & The Good Life, where the best moments are meant to be shared.
