A Feis-Forward Night at The Ledges: August’s Islay-Inspired Scotch Tasting

Introduction


August’s Scotch Tasting at The Ledges felt like a welcome return to ritual. It had been a few months since our last tasting, and the anticipation of an Islay-forward lineup made the evening feel like a reunion with old friends. Even better, this was our last outing with Ashley before she headed back to university for the Fall — a sweet little bookmark on the end of summer.


We arrived with just minutes to spare, skipping our usual pre-game stop at the bar. Thankfully, the ballroom staff saved the day, delivering Amaretto Sours to both Ashley and me right at the table. The room was buzzing — everyone standing, greeting, catching up — the kind of warm, familiar energy that makes these monthly tastings feel like home.

How the Night Unfolded


The Expressions


The evening’s flight featured four limited-edition Islay expressions — each one a festival darling from this year’s Fèis Ìle:

Each bottle brought its own personality to the table — smoky, sweet, bold, or elegant — and together they created a beautifully curated Islay journey.


Fèis Ìle – The Islay Festival


Fèis Ìle is Scotland’s annual celebration of Islay’s whisky heritage — a weeklong festival where distilleries open their doors, release special bottlings, and welcome enthusiasts from around the world. The island transforms into a lively blend of music, tastings, coastal gatherings, and community traditions. Each distillery hosts its own “open day,” offering rare pours and behind-the-scenes experiences that can’t be found anywhere else.


This year’s festival releases — including all four expressions in our tasting — carried that unmistakable sense of occasion, crafted specifically for whisky lovers who appreciate the magic of Islay’s peat, sea, and spirit.


The Tasting Pairings


Chef Phil and his team delivered another beautifully executed menu, each course designed to complement the whisky it accompanied. Hats off to everyone who made the evening seamless and delicious.

Course 1  

Mac-Talla “Cognac Cask”  

Paired with Seared Diver Scallop, whipped fromage blanc, compressed apple, Marcona almonds, herb oil  


This plate was a standout — especially when we made sure to gather every element into each bite. The scallop’s sweetness and the Cognac Cask’s warmth played beautifully together.

  • Paired with Seared Diver Scallop, whipped fromage blanc, compressed apple, Marcona almonds, herb oil

Course 2  

Laphroaig “Cairdeas French Oak”  

Paired with Roasted Salmon, sweet corn purée, charred corn succotash, bourbon butter  


A generous serving of salmon anchored this dish, and the pairing was spot-on. The French Oak’s subtle sweetness softened Laphroaig’s signature smoke just enough to let the corn and bourbon butter shine.

Course 3  

Port Charlotte “PC5 Redux”  

Paired with Grilled Ribeye, potato fondant, roasted wild mushrooms, black garlic jus  


This was Jeff’s favorite pour of the night — bold, peaty, and unapologetic. The ribeye pairing was rich and deeply satisfying.

Course 4  

Ardbeg “Dolce”  

Paired with Mille-Feuille, chocolate mousse, brown butter caramel, vanilla bean mascarpone  


Ashley claimed this as her favorite pour, and I claimed the dessert as mine (no surprise there). The Dolce’s playful sweetness made this final course feel like a celebration.

As for me — I didn’t declare a favorite pour, but I did finish all of mine. For someone still learning to appreciate Scotch, that felt like a quiet victory.

Closing in the His, Hers & the Good Life Style

The PC5 Redux stole the show for me. I love a pour that leans into its peat and power, and this one delivered exactly what I look for in an Islay expression. The ribeye pairing was perfect, and the whole evening reminded me why these tastings are such a highlight of our month.


Her (Nancy Fae)

I loved being back at The Ledges for a Scotch night — especially with Ashley there for one last summer outing. The Cognac Cask scallop course was my favorite plate, and I’m proud of myself for finishing all four pours. I’m still learning, still exploring, and still enjoying every step of this whisky journey.


The Good Life

This bottle lineup fits beautifully into our Good Life because it blends tradition, discovery, and shared experience. Limited festival releases, thoughtful pairings, and a night spent with family — that’s the kind of memory that lingers long after the last glass is empty.
