A Summer Night in Porto: Cooper’s Hawk Wine Club Dinner in Madison, Alabama
Written by Nancy Fae for His, Hers & the Good Life
Introduction
There’s a particular kind of magic that happens when Cooper’s Hawk hosts one of its themed Wine Club dinners — a blend of anticipation, discovery, and that unmistakable feeling of being part of something special. Since the Madison location opened in February 2026, Jeff and I have found ourselves drawn back again and again, not just for the wine but for the way these dinners turn an ordinary evening into a story worth telling.
This month’s event, A Summer Night in Porto, sold out faster than anyone expected. We were lucky — a last‑minute cancellation opened the door, and we swooped in like seasoned pros. Even better, we shared the evening with our dear friends Dean and Stacie Della Pella, whose presence always elevates the night from delightful to downright memorable.

About the Event
Cooper’s Hawk hosts monthly member‑only Wine Club Dinners, each themed to transport guests somewhere new. For July 2026, the destination was Portugal — specifically Porto, where summer nights hum with music, color, and tradition.
“Portugal is famous for its summer street festival with origins that honor the summer solstice. We’re bringing the fun to you with this month’s Wine Club Dinner. Sample local favorites along with our vibrant Vinho Verde as we kick summer off Portuguese-style!”
The room was dressed for the occasion — lemons glowing in glass vases, patterned runners reminiscent of Portuguese tiles, and a warm ambiance that made the evening feel like a celebration along the Douro River.

How the Evening Unfolded
The evening unfolded with thoughtful pacing, warm hospitality, and a menu that felt like a culinary postcard from Porto. Each course brought its own charm, and together they created a beautifully layered experience.
The leadership team shifted roles for July. Rebecca, the General Manager, oversaw the kitchen and service from behind the scenes, while Assistant General Manager Ryan Stone hosted the evening. Chef Danielle introduced her culinary team, and our servers, Brittany and Heather, guided us through each course with genuine warmth.

Starter: Porto Punch
We were greeted immediately with the Porto Punch — a delicious sparkling cocktail of Cooper’s Hawk Nightjar wine, citrus, and bubbles. It was bright, refreshing, and the perfect way to set the tone for a summer‑themed evening.

Bread Course: Papo Secos
The bread course arrived promptly, a noticeable improvement from June’s dinner. The rolls were delicious and warm, and the smoked paprika butter gave them a wonderful savory kick. Simple, comforting, and exactly what you want at the start of a multi‑course meal.

First Course: Rissóis de Camarão y Caranguejo
Paired with Vinho Verde
The shrimp and crab turnover was a standout — savory and flavorful inside, crisp and golden on the outside. The accompanying salad added brightness, and the Indian‑spiced cilantro‑lemon yogurt tied everything together. Paired with the vibrant Vinho Verde, the dish felt both refreshing and indulgent.

Second Course: Frango de Churrasco
Paired with Tempranillo
This course was the showstopper. The generous half‑chicken serving was beautifully grilled, tender, and full of flavor. The Pilau Rice was delicious and unique, adding a subtle aromatic layer that complemented the piri piri sauce. The Tempranillo pairing brought depth and warmth, making this course unforgettable.
Tempranillo Second Course: Frango de Churrasco
Third Course: Pastéis de Nata de Chocolate
Paired with Nightjar
The dessert course brought a perfect ending. The chocolate custard tart was rich and silky, topped with fresh raspberries that added a bright pop. Paired with Nightjar — Cooper’s Hawk’s version of a port wine — the combination was decadent, balanced, and deeply satisfying.

Grand Prize Winning
The evening included a playful culinary matching game featuring iconic Portuguese dishes. Dean, resident foodie and trivia savant, scored a perfect match and won a bottle of Vinho Verde. Then, in a stroke of luck, he was selected for the grand prize — a beautiful serving set of a platter, bowls, and plates. His grin said everything.
The Game The Winner - Dean
His Take (Jeff)
There’s something about Cooper’s Hawk dinners that hits my sweet spot — good food, good wine, and good company without any pretense. The Porto Punch was a fun opener, but that half‑chicken was the real star. I’m still thinking about how they got that skin so perfect.
The game was a blast, and watching Dean win both rounds was the cherry on top. Nights like this remind me why we love being Wine Club members — it’s not just the wine; it’s the experience.
Her Take (Nancy Fae)
For me, the evening felt like stepping into a warm, citrus‑scented breeze off the Portuguese coast. The décor, the pacing, the menu — everything felt thoughtfully curated. The Vinho Verde pairing with the first course was vibrant and refreshing, and that chocolate tart paired with Nightjar was a moment I wanted to savor slowly.
Sharing the night with Dean and Stacie made it even better. Cooper’s Hawk has quickly become one of our favorite places, and evenings like this are exactly why.

Closing in the His, Hers & the Good Life Style
His (Jeff)
Give me a night with great food, great wine, and great friends, and I’m a happy man. Cooper’s Hawk delivered again.
Her (Nancy Fae)
This dinner felt like a postcard from Porto — bright, flavorful, and full of joy. I’m already looking forward to next month.
The Good Life
A Summer Night in Porto fits beautifully into our Good Life because it blends discovery, friendship, and the simple pleasure of savoring something special. It’s not just a dinner — it’s a memory we’ll revisit with every future pour of Vinho Verde or Nightjar.
