12-Year Bourbon Finished in French Oak Casks
This 12-year-old bourbon underwent a secondary maturation in hand-selected French oak casks with distinct toast levels designed to enhance its aromatic depth and enrich its palate. The influence of the French oak imparts a rich tapestry of flavors—warm nutmeg and aromatic allspice unfold on the palate, followed by layers of toasted hazelnut and creamy vanilla, and a sophisticated touch of worn leather, adding a refined, earthy character.
French oak provides distinctive flavor notes: prominent nutty (caramelized butter), woody (rounded and complex), and aromatic vanilla flavors through a unique blend of lactones and vanillin compounds. Tannins from French oak contribute a balanced structure providing necessary complexity, mouthfeel, and a balanced finishing process over longer periods of time. French oak offers a more refined subtle contribution compared to heavily toasted American Oak barrels used for initial maturation or heavy charring, adding layers of flavor without overpowering the bourbon itself.

FLAVOR NOTES
A bourbon of ample maturity already brimming with an assortment of decadent desserts has been nudged to and fro by French oak to incorporate the broad array of spices that make the wood species so highly prized by winemakers the world over. Bourbon’s typical old-fashioned donut note has seen a dusting of cinnamon thanks to the French oak; its innate custard has been laced with nutmeg and its black tea loaded with clove and turmeric.

Appearance: Antique brass buckle.
Nose: Pear brandy, pineapple, and dried persimmon compose the fruity volatiles that are always quickest out of the gate. Pizzelle, cinnamon donut, and mulled wine all reflect the heightened presence of spice typical of French oak. The nose’s dessert menu also integrates the broad nuttiness that comes with age, adding hazelnut praline, hot cocoa and nocino. The double barreling has brought out the wood’s more resinous side with thyme, tea tree oil, and incense.
Palate: Here the French oak really sings, specifically a song of walking into an old spice shop with innumerable flavors but one can tease out allspice, clove, turmeric, and peppercorn. As with the nose, it does more than just layer on spices, it also adds lavender, sage smoke, and sandalwood.
Finish: Coffee cake, blueberries, and maraschino cherries make for a very classic bourbon finish. The exotic, resinous woodiness lends a strong undercurrent of peppery olive oil, graphite-flecked pencil shavings and guttering candle.

It’s the earthy side that’s drawn out in the form of pipe smoke, black truffles, and spearmint. The same thing happens on the palate, with the spices toned down to reveal vellichor, that is, the character of old books in all their dusty, leathery, papery glory.

Joint Introduction
April brought a little thrill to our doorstep — our PourMore Enthusiast Whiskey of the Month Club delivery — and inside sat a bottle we immediately recognized as something special: Barrell Bourbon 12 Year Finished in French Oak Casks. We’ve known Barrell Craft Spirits for a while now; a friend gifted us a few of their bottles in the past, and each one proved that Barrell doesn’t just blend whiskey, they compose it.
This particular expression already carries a reputation. It landed at #12 on Fred Minnick’s Top 100 Spirits of 2025, which is no small feat considering the competition. The bottle itself feels like a promise: 12 years in Kentucky oak, then a thoughtful finishing period in hand-selected French oak casks with varying toast levels. A bourbon shaped by nuance, patience, and a craftsman’s curiosity.
We haven’t opened it yet. And somehow, that makes the anticipation even better.

There’s something about a French oak finish that grabs my attention. American oak is familiar — bold, charred, dependable. But French oak? That’s finesse. It’s the difference between a good suit and a tailored one.
Looking at this bottle, I’m already imagining the layers: the pear and pineapple brightness on the nose, the cinnamon donut warmth, the hazelnut praline richness. The palate sounds like it walks a tightrope between spice and softness — vanilla, toasted hazelnut, lavender, sage. And that finish? Coffee cake, dark fruit, peppery oak, leather, even a hint of graphite dryness. That’s complexity with intention.

The story behind it is what pulls me in: Barrell Craft Spirits selecting casks with different toast levels, layering nuance instead of overpowering the bourbon’s original voice.
The tasting notes read like a sensory novel: dried fruit, mulled wine, cocoa, herbal resin. Soft florals. Dark fruit. Leather. It’s the kind of bourbon that seems designed for evenings when the house is quiet, the lights are low, and you want a pour that unfolds slowly.
I’m also intrigued by the cocktail PourMore included — the French Oak Bloom. Apricot liqueur, honey syrup, lemon, bitters … it sounds bright and romantic, the kind of drink you’d enjoy on a warm evening with music playing softly in the background.
This bottle feels like a moment waiting to happen.

How We Will Enjoy This Bourbon
We’re planning to savor our first pour neat, letting the French oak finishing speak for itself. After that, we’ll follow Barrell’s own suggestion and try it again with a few drops of spring water to open up the florals and soften the spice.
And because PourMore included the recipe for the French Oak Bloom, we’ll absolutely be making it. The combination of lemon, honey, apricot liqueur, and bitters sounds like a refreshing counterpoint to the bourbon’s depth. We’ll mix it in a rocks glass over fresh ice, garnish it with a lemon twist and an edible flower, and enjoy it as a bright, elegant companion to the bottle’s more contemplative neat pour.
