A celebration of Oregon’s legendary brewing culture, this whiskey pushes the boundaries of flavor.


Our Stout Cask Finish begins with Westward Whiskey Original, then is aged for up to one year in barrels that once held Stout from our local brewery collaborators. These casks, seasoned with rich and roasty beer, lend notes of chocolate, coffee, and dark malt—enhancing the depth of our whiskey without overpowering it.


For nearly a decade, we’ve exchanged barrels with some of the Northwest’s top brewers in a shared tradition of craftsmanship. This whiskey is the product of that creative exchange.


Bottled at 46% ABV / 92 proof

AROMA: Hazelnut, honeycomb, roasted barley

Westward American Single Malt Whiskey Stout Cask (92 Proof): A Toast to Oregon’s Brewing Soul


Our introduction to Westward through Pourmore didn’t just spark curiosity — it opened a door. After tasting the Reserve Bar Top Flight Series Barrel 16, we knew we needed to explore more of what this distillery could do. That’s how the Westward American Single Malt Whiskey Stout Cask found its way into the Sipping Room.


This bottle feels like a love letter to Oregon’s brewing culture. Westward begins with their Original whiskey, then finishes it for up to a year in barrels that once held stout from local brewery collaborators. Those stout‑seasoned casks lend notes of chocolate, coffee, and dark malt — flavors that deepen the whiskey without overwhelming it.

It’s a bottle shaped by community and creativity, the result of nearly a decade of barrel‑swapping with some of the Northwest’s top brewers. Even unopened, it radiates the promise of richness and depth.


We haven’t tasted it yet, but the anticipation is part of the ritual. Every time we pass it in the Sipping Room, we imagine the moment we finally pour that first glass. If Westward continues to impress the way it did with our first bottle, this Stout Cask may become a regular in our rotation.

Our version of a Gold Rush (which most closely resembles a whiskey sour but incorporates honey) is made with Benedictine to complement the grain and milk chocolate elements of our Stout Cask.


Ingredients

  • 1 1/2 parts Westward Whiskey Stout Cask

  • 3/4 part lemon juice

  • 1/2 part honey syrup

  • 1/4 part Benedictine

  • honeycomb


Instructions

  • Combine ingredients over ice into a shaking tin and shake until mixed together.

  • Strain into a rocks glass with 1 large ice cube and garnish with a honeycomb.
