Some cocktails are classics for a reason. Others become unforgettable because of where you drink them. During my recent visit to the Philippines — my birth country, a place that always feels like memory and discovery intertwined — I found myself experiencing the Mai Tai in a way I never had before.
At the Marriott Manila Greatroom Bar, surrounded by the hum of travelers, the glow of warm lights, and the unmistakable hospitality that feels uniquely Filipino, I ordered a Mai Tai expecting something familiar. What I received instead was a revelation.

The bartender smiled as he set the drink down, its sunset colors glowing through the glass. “All local rum,” he said proudly — and that alone made me sit up a little straighter.
The Mai Tai here is built on Zabana, a Philippine rum that deserves far more global attention. The combination of Zabana Blanco and Zabana 8 Real Rum created a layered, expressive base that transformed the cocktail into something deeper, richer, and unmistakably Filipino.
Where many Mai Tais lean heavily on citrus and almond sweetness, this one carried unexpected notes — coffee, vanilla, chocolate, and honey — subtle but unmistakable. It was as if the rum itself wanted to tell a story.

Fresh juices made all the difference — bright, lively, and aromatic. The orgeat added its signature almond softness, while the grenadine deepened the color into a tropical gradient.
